Grilled Peaches w/ Vanilla Bean Whipped Cream

  • 4 ripe peaches, halved and pitted

  • 2 T. melted coconut oil

  • 1-2 T. maple syrup

  • Cinnamon

  • 1 cup heavy cream

  • 1 vanilla bean, cut lengthwise and beans scraped out

  • 2 T. cane sugar



  • Preheat grill to medium-high heat, about 425℉.

  • Brush open faces of peach halves with coconut oil and a light dusting of cinnamon.

  • Place peach halves open sides down on grill grates and grill until grill marks appear, about 1 minute.

  • Flip peaches and brush each half with about 1 tsp. maple syrup then flip the peach halves so they are face down against the grill grates and rotated, making criss-cross grill marks. Cook until tender throughout, about 1 minute.

  • For the whipped cream, whisk to combine heavy cream and vanilla beans in a medium bowl. Cover and refrigerate for 1 hour. At the same time, chill the bowl and paddle to an electric mixer.

  • Once chilled, strain mixture into the chilled mixing bowl through a fine mesh sieve. Beat on medium speed for 1 minute. Mix in sugar while the mixer is running. Turn speed to medium-high and beat until soft peaks form.

  • Top each peach half with a scoop of whipped cream.

RD Tip: A delicious non-dairy alternative option is coconut milk! Coconut milk is calorically dense, with about 93% of calories coming from fat, predominantly saturated fat. While we understand that emphasizing unsaturated fats (i.e. foods like avocado, olive oil, nuts, and seeds) is most helpful for the body, some saturated fat is perfectly OK in the diet. Coconut milk is also a source of vitamins and minerals like magnesium, copper, potassium, and selenium.
