One-Skillet Cauliflower Gnocchi Stir Fry

Ingredients:

  • 1 bag frozen cauliflower gnocchi from Trader Joe’s

  • 2 cups chopped veggies of choices (mushrooms, bell peppers, onion, shallot, asparagus, broccoli, zucchini, etc.)

  • Thinly sliced chicken sausage

  • Garlic cloves, finely minced

  • 1 T. olive or avocado oil

  • 1/4 tsp. salt

  • 1/4 tsp. pepper

  • Pesto

 

Directions:

  • Place oil in skillet and heat on medium-high heat.

  • Add bag of frozen cauliflower to hot skillet and sauté for about 5 minutes or until starting to thaw.

  • Add veggie medley to skillet and sauté until veggies begin to get tender and gnocchi barely starting to brown.

  • Throw in the sliced chicken sausage along with the minced garlic and sauté for about 7 more minutes or until sausage, veggies, and gnocchi are browned.

  • Season with salt and pepper and toss with 2-3 T. pesto.

  • Share amongst 2 people or enjoy in 2 separate servings.


RD Tip: This meal comes together in about 15 minutes. Frozen veggies can make for an even greater time saver, making this meal one you can keep all ingredients on hand in the freezer as a back-up, in-a-pinch option. Frozen veggies (and fruit) provide more or less equivalent nutrition to fresh produce.
