Roasted Tahini Mustard Rainbow Carrots

Ingredients:

  • 1-2 bunches heirloom rainbow carrots (any carrots will do, but these are fun!)

  • 1 T. Tahini

  • 1 T. Whole grain mustard

  • 1 T. Maple Syrup

  • Juice of 1 lemon

  • Salt & pepper to taste

  • 2 T. each chopped parsley & cilantro (optional)

 

Directions:

  • Preheat oven to 400°F. Spray baking sheet with coconut or avocado oil.

  • Wash and remove stems from carrots. Set aside.

  • Whisk together tahini, mustard, maple syrup, and lemon juice.

  • Add salt & pepper to taste.

  • Stir in parsley and cilantro, if using.

  • Toss rainbow carrots in sauce, spread on oiled pan. Bake for 25 to 40 minutes, depending on preference. Roast longer for a crispier, charred outer edge. Heirloom variety carrots tend to be smaller and will roast quicker.


RD Tip: Rainbow carrots are fun because they offer a wide array of antioxidants and phytonutrients! The different pigments in fruits & vegetables (i.e. red vs. purple vs. orange vs. yellow) each offer a different set of health benefits.
