Roasted Tahini Mustard Rainbow Carrots

1-2 bunches heirloom rainbow carrots (any carrots will do, but these are fun!)
1 T. Tahini
1 T. Whole grain mustard
1 T. Maple Syrup
Juice of 1 lemon
Salt & pepper to taste
2 T. each chopped parsley & cilantro (optional)
Preheat oven to 400°F. Spray baking sheet with coconut or avocado oil.
Wash and remove stems from carrots. Set aside.
Whisk together tahini, mustard, maple syrup, and lemon juice.
Add salt & pepper to taste.
Stir in parsley and cilantro, if using.
Toss rainbow carrots in sauce, spread on oiled pan. Bake for 25 to 40 minutes, depending on preference. Roast longer for a crispier, charred outer edge. Heirloom variety carrots tend to be smaller and will roast quicker.
RD Tip: Rainbow carrots are fun because they offer a wide array of antioxidants and phytonutrients! The different pigments in fruits & vegetables (i.e. red vs. purple vs. orange vs. yellow) each offer a different set of health benefits.
