Strawberry Summer Salad

2 cups torn romaine lettuce
2 cups fresh baby spinach
2 cups sliced fresh strawberries
1/2 small red onion, thinly sliced
1 avocado, cubed
2 green onions
1/2 cup candied pecans
Crumbled feta or bleu cheese, optional
1/4 cup white wine or champagne vinegar
1/4 cup sugar or honey
1 small shallot, outer skin removed
1-1 1/2 T. poppy seeds
1/2 tsp. salt
1/2 tsp. ground mustard
1/2 cup good olive oil
In a large bowl, combine greens, top with strawberries, red and green onion, avocado, pecans, and cheese if using.
Whisk together vinegar and sugar until sugar is dissolved. Using a microplane, shave the shallot into the mixture then add poppy seeds, salt, and mustard. While whisking the dressing steadily, pour olive oil in a slow, steady stream.
Drizzle dressing over salad and toss.
RD Tip: Top with grilled chicken, shrimp, or salmon and call it a meal!
