Strawberry Summer Salad

  • 2 cups torn romaine lettuce

  • 2 cups fresh baby spinach

  • 2 cups sliced fresh strawberries

  • 1/2 small red onion, thinly sliced

  • 1 avocado, cubed

  • 2 green onions

  • 1/2 cup candied pecans

  • Crumbled feta or bleu cheese, optional


  • 1/4 cup white wine or champagne vinegar

  • 1/4 cup sugar or honey

  • 1 small shallot, outer skin removed

  • 1-1 1/2 T. poppy seeds

  • 1/2 tsp. salt

  • 1/2 tsp. ground mustard

  • 1/2 cup good olive oil



  • In a large bowl, combine greens, top with strawberries, red and green onion, avocado, pecans, and cheese if using.

  • Whisk together vinegar and sugar until sugar is dissolved. Using a microplane, shave the shallot into the mixture then add poppy seeds, salt, and mustard. While whisking the dressing steadily, pour olive oil in a slow, steady stream.

  • Drizzle dressing over salad and toss.

RD Tip: Top with grilled chicken, shrimp, or salmon and call it a meal!
