Turmeric Chicken Salad

Ingredients:

2-4 Servings

  • 2 cups shredded chicken

  • 3/4 cup plain Greek yogurt

  • 1/4 cup walnuts, chopped

  • 1T. pistachios, chopped

  • 2 T. dried cranberries

  • 1 tsp ground turmeric

  • Salt and pepper to taste

  • Red pepper flakes to taste

 

Directions:

  • Combine all ingredients in a large bowl and mix well.

  • Serve the chicken salad mixture on lettuce cups, between two pieces of bread, or with crackers!


RD Tip: Turmeric has powerful anti-inflammatory effects in the body and is also an antioxidant. Because of turmeric’s bright yellow color, it does stain fairly easy, so be careful when you are cooking this chicken salad or any dish with this spice!
