Garlic Roasted Radishes

  • 1 lb. radishes, ends trimmed and halved

  • 1 T. melted butter or ghee (coconut oil or avocado oil works, too)

  • 1/2 tsp. salt

  • 1/4 tsp. pepper

  • 3 garlic cloves, finely minced

  • 1/4 tsp. dried parsley or dried chives



  • Preheat oven to 425℉.

  • In a bowl, mix all ingredients besides the minced garlic and dried herbs.

  • Spread radish mixture evenly across a 9x13 baking dish lined with parchment paper.

  • Bake for 20-25 minutes, tossing every 10 minutes. Add minced garlic and dried herbs and bake for an additional 5 minutes, or until radishes are golden brown.

  • Optional: serve with a side of ranch for dipping!

RD Tip: Vitamin C is the real shining star in the radish, providing 14% of your daily value in 1/2 cup serving. Radishes may also be helpful as an anti-congestive, so keep these little guys in mind if you feel a cold or an allergy flare creeping in!
