Salmon Burgers with Lemon Dill Yogurt Sauce

1 lb. wild caught salmon
1 T. lemon zest
2 T. shallot, minced
1 T. garlic, minced
1/4 cup ground almond meal
Salt and pepper to taste
Ingredients for yogurt sauce:
1 container (5.3 oz.) plain Greek yogurt
1 T. lemon juice
1 T. dill, chopped
2 T. cucumber, chopped
Pepper to taste
Place all the ingredients for the yogurt sauce in a small bowl and whisk to combine. Keep in refrigerator for later.
Remove skin and de-bone salmon. Cut into chunks and place in a food processor.
Slowly pulse salmon until it is ground.
Add lemon zest, shallot, garlic, salt, pepper and almond meal to food processor and slowly pulse until all ingredients are combined.
Separate mixture into 4 even patties with hands.
Turn the grill to medium-high heat (400 degrees). Place a piece of tin foil on the grill and spray it with olive oil or avocado oil spray.
Place salmon patties on the grill and cover. Cook for 4-6 minutes, and then flip them to cook for another 4-6 minutes.
Top each salmon patty with the yogurt sauce and put between burger buns or lettuce. Enjoy!
RD Tip: Salmon is high in omega 3 fatty acids, which have an anti-inflammatory effect in the body. The healthy fat in salmon also helps with hair, skin and heart health.
