4 Servings

  • 1 lb. wild caught salmon

  • 1 T. lemon zest

  • 2 T. shallot, minced

  • 1 T. garlic, minced

  • 1/4 cup ground almond meal

  • Salt and pepper to taste

Ingredients for yogurt sauce:

  • 1 container (5.3 oz.) plain Greek yogurt

  • 1 T. lemon juice

  • 1 T. dill, chopped

  • 2 T. cucumber, chopped

  • Pepper to taste

  • Place all the ingredients for the yogurt sauce in a small bowl and whisk to combine. Keep in refrigerator for later.

  • Remove skin and de-bone salmon. Cut into chunks and place in a food processor.

  • Slowly pulse salmon until it is ground.

  • Add lemon zest, shallot, garlic, salt, pepper and almond meal to food processor and slowly pulse until all ingredients are combined.

  • Separate mixture into 4 even patties with hands.

  • Turn the grill to medium-high heat (400 degrees). Place a piece of tin foil on the grill and spray it with olive oil or avocado oil spray.

  • Place salmon patties on the grill and cover. Cook for 4-6 minutes, and then flip them to cook for another 4-6 minutes.

  • Top each salmon patty with the yogurt sauce and put between burger buns or lettuce. Enjoy!

RD Tip: Salmon is high in omega 3 fatty acids, which have an anti-inflammatory effect in the body. The healthy fat in salmon also helps with hair, skin and heart health.
